RECIPE: Smoked Red Pepper Salad Dressing


As I started to feel a cold coming on, I knew I needed more Vitamin C! The first thing most people think of are oranges, however, I recently read an article on the amounts of Vitamin C found in fruits and veggies and let’s just say; oranges were definitely not at the top of the list. It turns out that sweet peppers are the highest in Vitamin C (%DV per large pepper: yellow, red and then green) So with that information along with other sources of Vitamin C and cold remedies, I decided to make myself a red pepper dressing. I searched the internet for a great recipe, and came across this bad boy from Made a few changes to my liking and it turned out  SO GOOD! I never knew something like smoked paprika would change my life, forever. Check out the recipe below and let me know what you think!

       Makes about 2 cups

  • 1/2 cup chickpeas
  • 1 chopped red pepper 
  • 1/2 cup water
  • 1/2 cup tahini
  • the juice of 2 small lemons
  • 1/2 tsp salt (or more to your liking)
  • 1/2 tsp smoked paprika
  • Dash of cayenne pepper (use however much you like. I used way more!)
  • Dash of turmeric 
  • OPTIONAL – nutritional yeast to get a cheesy flavour (I have not tried it yet but in my brain it sounds really good!)
