As I started to feel a cold coming on, I knew I needed more Vitamin C! The first thing most people think of are oranges, however, I recently read an article on the amounts of Vitamin C found in fruits and veggies and let’s just say; oranges were definitely not at the top of the list. It turns out that sweet peppers are the highest in Vitamin C (%DV per large pepper: yellow, red and then green) So with that information along with other sources of Vitamin C and cold remedies, I decided to make myself a red pepper dressing. I searched the internet for a great recipe, and came across this bad boy from www.choosingraw.com. Made a few changes to my liking and it turned out SO GOOD! I never knew something like smoked paprika would change my life, forever. Check out the recipe below and let me know what you think!
The Salad consists of Organic green leaf lettuce, Kale, Portobello mushrooms, pea spouts and tomatoes.
Makes about 2 cups
- 1/2 cup chickpeas
- 1 chopped red pepper
- 1/2 cup water
- 1/2 cup tahini
- the juice of 2 small lemons
- 1/2 tsp salt (or more to your liking)
- 1/2 tsp smoked paprika
- Dash of cayenne pepper (use however much you like. I used way more!)
- Dash of turmeric
- OPTIONAL – nutritional yeast to get a cheesy flavour (I have not tried it yet but in my brain it sounds really good!)
