RECIPE: Raw Falafel Salad

This salad was inspired by Megan Elizabeth who created this delicious raw falafel recipe. I hope you enjoy and don’t be afraid to change it up! Throw in whatever veggies you want and make it your own!

The Falafel

  • a food processor
  • 3/4 cup of raw sunflower seeds
  • 2 cups of chopped carrots
  • 1/2 cup of cilantro
  • 1/2 cup of green onions
  • tsp of lime juice
  • 1/2 tsp of coriander seeds
  • 1/2 tsp of cumin seeds
  • sesame seeds

The Salad

  • spring mix
  • cucumber
  • yellow pepper
  • grape tomatoes
  • red onion
  • mung bean sprouts

The Dressing

  • 1/2 tbs of Tahini
  • tbs of Lemon or lime juice
  • tbs of water
  • pinch of dried dill
